Memory Trace 2019 Wine Barrel Aged Mixed Fermentation Sour Saison

Looking back to its origins, all beer used to be mixed culture fermentation and with enough time would eventually become sour. Thanks to modern advancements in brewing science and the industrial revolution, we've observed a boom in brewing efficiency coinciding with a decline in fermentation individuality. Our mixed fermentation sour program was built on the foundation of our house culture of wild yeast and bacteria, a culture that was developed over many years prior to opening Rorschach. 

While we haven't produced a mixed fermentation beer in some time, we still have bottles of our mixed fermentation beers quietly aging and continuing to develop overtime. This beer was fermented in stainless for 8+ months, then transferred to a red wine barrel for another 6 months. Packaged in 2019 and left to rest until now.

4.5% ABV / 375ml
